Ingredients
  

For the Meatballs

  • 800 g ground beef
  • 2/3 cup medium-grain rice
  • 1 grated onion
  • 2 cloves grated garlic
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 tsp dried oregano
  • 1 whole egg
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs optional, to help bind

To Cook the Soup

  • 1/4 cup medium-grain rice
  • A drizzle of olive oil
  • Water fill your pot halfway

For the Avgolemono

  • 2 eggs separated
  • Juice of 2 lemons or more if you like a lot! I know you do.

Instructions
 

Make the Yourvalakia Mixture

  • In a large bowl, combine the ground beef, rice, grated onion and garlic, fresh parsley, mint, oregano, and egg. Season generously with salt and pepper. Mix thoroughly with your hands until all ingredients are well incorporated. The mixture should be moist but firm enough to hold its shape. If it feels too loose, add a few tablespoons of breadcrumbs to help bind it.

Shape the Meatballs

  • Using a tablespoon or your hands, gently form the mixture into smooth, golf ball-sized meatballs. Be careful not to compact them too tightly—they should remain tender and soft when cooked.

Simmer the Meatballs

  • Fill a large pot with water about halfway and bring to a gentle simmer. Carefully place each meatball into the pot, allowing them to cook slowly. Once all the meatballs are in, add the extra 1/4 cup of rice to the broth. This not only thickensa but adds extra heartiness.
  • Drizzle in a bit of olive oil and gently stir. Allow the soup to come to a gentle boil, then reduce the heat to a soft simmer. Skim off any foam or impurities that rise to the top.
  • Let the meatballs simmer for about 40 minutes, or until the rice inside is tender and fully cooked.

Prepare the Avgolemono Sauce

  • While the meatballs are finishing, prepare the avgolemono sauce.
  • In a mixing bowl, whisk the egg whites until they become light and frothy.
  • Add in the egg yolks and continue whisking until smooth.
  • Slowly pour in the lemon juice, whisking constantly. The sauce should be smooth, bright, and aromatic.

Temper the Avgolemono

  • To prevent the eggs from scrambling, it's important to temper the mixture.
  • Using a ladle, gradually add hot broth from the pot to the egg-lemon mixture, whisking continuously.
  • Add about 5–6 ladles of broth until the avgolemono feels warm to the touch.
  • Slowly pour the tempered avgolemono back into the soup pot, stirring gently to combine.
  • Do not boil after this point. The soup should be warm, not hot, to preserve the creamy texture of the egg mixture.
  • Cover the pot and let it sit for 10–15 minutes to allow the flavours to meld and the sauce to gently thicken.

Serve and Enjoy

  • Ladle the warm yourvalakia and broth into bowls and finish with a fresh crack of black pepper. Optionally, you can drizzle a touch of extra lemon juice or olive oil on top.
  • Serve with crusty bread or a side of lightly dressed greens for a balanced meal.
