Pasteli – Greek Honey & Sesame Bars with Ancient Roots and Sweet Family Memories

Some recipes carry more than just flavour, they carry generations of tradition and the warmth of cherished memories. Pasteli, the beloved Greek honey and sesame bar, is one of those recipes for me.

Made with just honey, sesame seeds, and pistachios, this simple yet powerful sweet treat dates back to Ancient Greece. Known then as “kandí” or “gastris,” versions of this nourishing bar were consumed by warriors and athletes for energy and strength. Centuries later, we’re still enjoying it, not only as a delicious snack but as a direct link to our ancestors' kitchens.

A Sweet Memory from My Childhood

As much as I love Pasteli for its simplicity and taste, it also holds a very special place in my heart because of my Papou Michali and Yiayia Kiki. Every time they visited us from Greece, I’d run to open their suitcase, not for the clothes or souvenirs, but for the stacks of pasteli they brought just for my cousins and me. Wrapped tightly and packed with care, it was their way of bringing a piece of home across the ocean. The moment I’d bite into one of those sticky, nutty bars, I was transported straight to the villages and traditions they left behind, but always carried with them.

That memory is the reason I love making Pasteli today. It’s not just a snack,  it’s a connection to them, to my roots, and to a culture that honours the beauty in simplicity.

PASTELI | Honey Sesame Bars

This traditional Greek Pasteli recipe blends ancient simplicity with family tradition. Made with honey, sesame, and pistachios, it's a nostalgic, wholesome treat.
Prep Time 10 minutes
Cook Time 30 minutes
Servings 15 pieces

Ingredients
  

  • 500 g sesame seeds
  • 500 g honey
  • 100 g pistachios shelled, roughly chopped or whole or any other nut of your choice

Instructions
 

Toast the sesame seeds:

  • In a wide pan over medium-high heat, toast the sesame seeds for about 5 minutes, stirring often. Add the pistachios and continue to toast for another 5 minutes, until the sesame seeds turn a light golden colour. Remove from the pan and set aside.

Heat the honey:

  • Allow the pan to cool slightly, then pour in the honey. Bring it to a gentle boil over medium-high heat. As soon as it begins to bubble, return the sesame and pistachio mixture to the pan.

Combine & cook:

  • Stir the mixture constantly for 10 minutes if you prefer a soft, chewy texture, or up to 20 minutes for a harder, crunchier finish.

Shape the Pasteli:

  • Line a 25x20cm tray with baking paper and pour in the mixture. Place another sheet of baking paper on top and use the back of a spoon or small rolling pin to gently press and compact the mixture evenly.

Cool & cut:

  • Let the pasteli cool completely before cutting into bars. Store in an airtight container, using parchment paper between layers to prevent sticking.
