Lahanodolmades – Greek Cabbage Rolls in Avgolemono Sauce
There are some dishes that feel like a warm hug from the past—Lahanodolmades is exactly that. These humble cabbage rolls, filled with beef, rice, and fresh herbs, simmered gently in a fragrant broth and finished with a silky egg-lemon (avgolemono) sauce, are the very definition of comfort food in a Greek household. For me, this dish is childhood on a plate—something I grew up eating and now love sharing with others.
Rolling Into Comfort, One Leaf at a Time
Lahanodolmades may look intricate, but they’re beautifully simple at heart. The process of carefully softening cabbage leaves, wrapping them around a herby rice and meat filling, and letting them slowly cook in a gentle broth is not only therapeutic—it’s steeped in tradition.
The classic Greek technique uses a whole cabbage, gently boiled until the leaves soften and can be easily separated. Each leaf becomes the perfect wrap for a delicious, aromatic filling.
Why I Cook the Mince First
There are a few different ways to prepare the filling for dolmades, but I always choose to cook the mince before combining it with the other ingredients. This step helps keep the filling loose and flavorful, and more importantly, ensures the rice cooks evenly and beautifully. The cooked mince also allows the herbs—like mint, dill, and parsley—to really shine without getting lost in the raw meat.
This extra step might seem small, but it makes a big difference in the final texture and taste.
LAHANODOLMADES AVGOLEMONO | Greek Cabbage Rolls in Egg Lemon Sauce

To prepare the cabbage
- 1 whole cabbage
- ¼ cup white vinegar
- 1 Tbsp salt
- Water to fill the pot
Filling
- 1 large onion finely chopped
- 3-4 garlic cloves crushed
- 800 g beef mince
- ¾ cup chopped fresh mint
- ¾ cup chopped fresh dill
- ½ cup chopped fresh parsley
- 1 tomato peeled and grated
- ½ cup washed medium grain rice
- 1 Tbsp dried oregano
- Salt & pepper to taste
To cook
- Vegetable stock paste optional or dissolve a stock cube in water
- Enough water to cover
- Cabbage leaf cut-offs for lining the pot
Avgolemono
- 2 eggs
- Juice of 3 lemons
Instructions
- Prep the cabbage:
- Remove a few outer leaves and cut out the core of the cabbage. Place it in a large pot with vinegar and salt, fill with water, and bring to a boil. Gently pull away leaves as they loosen and set aside.
- Cook the filling:
- In a pan, heat 4 tablespoons of olive oil. Sauté the onion and garlic until soft, then add the beef mince and cook through. Transfer to a bowl and mix in the herbs, grated tomato, rice, oregano, salt, and pepper.
- Prepare the leaves:
- Cut out the thick vein from each cabbage leaf and then slice the leaf in half for easier rolling. Save the cut-offs to line the base of the pot.
- Roll the dolmades:
- Add about 1½ tablespoons of filling to each leaf, roll tightly, and tuck in the sides. Place the dolmada seam side down into the pot, packed snugly together. Pour water (with optional stock paste) until it just reaches the top layer of dolmades. Place a plate on top to hold them down.
- Cook:
- Simmer gently for about 1 hour an 30-45 minutes or until the rice is tender.
- Make the avgolemono:
- Whisk the eggs and lemon juice until frothy. Slowly add a ladle of hot broth from the pot into the egg mixture, whisking constantly to temper it. Then pour the mixture back into the pot and gently swirl to combine. Let it sit off the heat for 10–15 minutes before serving.
