GAMOPILAFO | Cretan Wedding Rice / Pilafi

- 1 whole chicken cut into pieces
- Water to cover the chicken
- Salt to taste
- short grain rice see method for perfect measurement
- Juice of 3 lemons
- 40 g melted butter or Stakovoutiro if available
- Extra virgin olive oil for drizzling
- Cracked black pepper for seasoning
Instructions
Prepare the Chicken:
- In a large pot, add the whole chicken pieces and fill it with enough water to cover the chicken plus more. Season well with salt, as the stock will be the base for the rice. Bring the water to a boil, and then reduce the heat to a simmer. Let the chicken cook for about 1 hour, or until the meat is very tender and falling off the bone. Be sure to skim the surface occasionally to remove any impurities that rise to the top.
Strain the Stock:
- Once the chicken is cooked, carefully remove the pieces of chicken from the pot. Set them aside to cool. Then, pass the chicken stock through a fine sieve to remove any solids and impurities. Return the strained stock to the pot. Take note of how many cups of stock you have, as you will need 1 cup of rice for every 3 cups of stock.
Cook the Rice:
- Add the appropriate amount of rice (1 cup of rice for every 3 cups of stock) to the pot of stock. Bring it to a gentle boil and let it cook, stirring occasionally, until it reaches a runny risotto-like consistency. Be careful not to let it dry out too much—keep the consistency loose, as the rice will continue to absorb the liquid.
Shred the Chicken:
- While the rice is cooking, shred the cooked chicken or leave it on the bone, depending on your preference. The tender chicken pairs beautifully with the creamy rice.
Add Lemon and Butter:
- Just before the rice reaches your desired consistency, stir in the juice of three lemons and 40g of melted butter (or Stakovoutiro if you have access to this traditional Cretan butter, which adds a wonderful depth of flavour). The lemon juice will bring a fresh, zesty note to the dish, while the butter (or Stakovoutiro) adds richness.
Serve:
- Spoon the rice onto plates. Top with the shredded or chicken pieces and finish with a generous drizzle of extra virgin olive oil and a sprinkle of cracked black pepper. The olive oil adds a silky finish, while the pepper enhances the overall flavour.
