My Mum’s Greek-Style Christmas Turkey — The Dish We Never Celebrate Without

Every family has that one dish that defines Christmas. For some, it’s pudding drenched in brandy or a glazed ham. But for us, among the souvlakia, fresh seafood, and sometimes even the lamb on the spit. For my family, it has always been my mum’s Greek-style Christmas turkey, the absolute star of our Christmas Eve table, and the recipe no Christmas celebration is complete without.

I can’t remember a single Christmas growing up where the house wasn’t filled with the smell of cinnamon, citrus, roasted nuts, and that unmistakable aroma of turkey slow-cooking in the oven. Mum would start preparing it early on Christmas Eve, tying on her apron with the quiet confidence of someone who knows she’s about to perform culinary magic. It’s her specialty, her pride, and honestly, her love language.

A few years ago, for the very first time, I decided to take on the challenge of recreating her masterpiece. I wanted to honour her tradition, and maybe earn her seal of approval. I spent the early Christmas morning chopping, stuffing, whisking, and basting, all while hearing her voice in my head reminding me, “Don’t rush it. Let the flavours do their thing.”

When I finally served it, I held my breath… and Mum smiled.
“That’s it,” she said. “That’s my turkey.”
And just like that, I knew I’d done her proud.

This blog post celebrates a beloved family tradition, Mum’s Greek-style Christmas turkey, the dish that always defines Christmas in our home. Filled with fragrant Greek-inspired stuffing and basted in a bright citrus-olive oil emulsion, this turkey has been Mum’s specialty for years. A few Christmases ago, I recreated her recipe for the first time and earned her heartfelt approval. The post shares the full recipe and reflects on the memories, aromas, and love that make this turkey more than just a meal, it’s the centerpiece of our celebration and a tradition we never celebrate Christmas without.

Ingredients
  

  • 5.5 kg turkey

The stuffing:

  • 2 tbsp Extra virgin olive oil
  • 1 brown onion chopped
  • 2 garlic cloves chopped
  • 3 sausages optional, but we never skip them
  • 1/3 cup white wine
  • 1/2 cup medium grain rice
  • 1/2 cup water
  • 1/3 cup pine nuts
  • 1/2 cup currants
  • 1/2 cup chopped dried figs
  • 1 tsp cinnamon
  • 1 tsp all spice
  • 1/2 cup chopped parsley
  • Salt & pepper

The Basting Emulsion:

  • 1/2 cup extra virgin olive oil
  • Juice of 2 lemons
  • Juice of 2 oranges
  • 2 garlic cloves grated
  • 1 tsp dried oregano
  • Salt & pepper

Instructions
 

  • Cook the sausage mince until browned, then add onion and garlic. Once fragrant, deglaze with wine and let it cook down. Add the rice and water and let it par-cook under a lid. When the water evaporates, stir in the pine nuts, currants, figs, spices, and parsley. Set aside.
  • Preheat the oven to 180°C fan-forced (Mum insists on the rack being just slightly lower — “so the heat wraps around it properly”).
  • Pat the turkey dry and loosely fill the cavity with stuffing. Don’t pack it tight; the rice needs space.
  • Tie the legs with kitchen string.
  • Pour the basting emulsion over the turkey. Add a good sprinkle of salt and 2 cups of water to the tray.
  • Cover tightly with baking paper, then foil.
  • Bake for 45 minutes per kilogram, undisturbed. And if you like, before the last 45 minutes you can add potatoes and sweet potatoes to the tray to cook in the turkey drippings.
  • For the last 45 minutes, uncover and baste every 5–10 minutes until beautifully golden.
  • Rest for 30 minutes before carving.
