Galotopita is traditionally made with pantry staples—milk, semolina, sugar, eggs, and butter—gently cooked into a thick, smooth custard before being baked into a golden pie. The absence of pastry makes it lighter, easier, and faster to prepare, while still delivering that classic creamy texture we all love.

The butter adds richness, but you can use a little less if you prefer it lighter. And once it’s baked, a simple dusting of cinnamon brings everything together with that familiar sweet-spiced aroma that reminds you of mum’s kitchen.

Cook Time 1 hour
Servings 12 slices

Ingredients
  

  • 1 litre full cream milk
  • 1 cup caster sugar
  • 1 cup fine semolina
  • 1 tsp vanilla extract
  • 2 eggs
  • 100 g unsalted butter or less, if preferred
  • Ground cinnamon for dusting

Instructions
 

  • Preheat your oven to 170°C (fan-forced).
  • In a medium pot over medium heat, gently warm the milk—don’t let it boil.
  • Slowly whisk in the semolina, then add the sugar and vanilla. Keep whisking until the mixture thickens into a smooth custard-like consistency.
  • Add the butter and stir until fully melted, then whisk in the eggs quickly to combine.
  • Pour the mixture into a well-greased 23cm round baking tray.
  • Bake for about 50 minutes, or until a thin golden crust forms on top.
  • Remove from oven and let cool. Dust generously with cinnamon.
  • Slice with a sharp knife and serve—best enjoyed with a coffee in hand.
