Servings 15 biscuits - approximately

Ingredients
  

  • 380 g almond meal
  • 80 g icing sugar
  • 2 egg whites
  • Zest of 1 orange
  • ¼ tsp almond extract optional, but it adds depth
  • Pinch of salt
  • 100 g flaked almonds

Instructions
 

  • Pre heat oven to 180 degrees Celsius fan forced. In a mixing bowl, combine the almond meal and salt. In another bowl, combine icing sugar, egg whites, orange zest, almond extract (if using), whisk well, then pour the mixture into the almond meal. Use your hands to knead the ingredients together into a soft dough.
  • Take tablespoon-sized amounts of the mixture, roll into balls, and press one side into the flaked almonds. Gently press the almonds in so they stick.
  • Arrange the cookies on your baking tray, almond side up.
  • Bake for 8 minutes for a soft and chewy texture, or up to 15 minutes for a lightly crisp edge and a golden finish.
  • Let the cookies cool completely and enjoy with a strong cup of Greek coffee.

    • Hi Virginia, you are referring to kourambiedes. They are a different cookie. Please use almond meal for this recipe, not almond flour, as the texture will be completely different. Almond flour is too fine, with no texture. I hope this helps! Enjoy xx
