OLIVE & FETA ALEVROPITA – Savoury Slice

A Savoury Herb, Feta & Olive Bake — My Go-To Add-to-Bowl Favourite

There’s nothing quite like a good “add to bowl” recipe — simple, satisfying, and packed with flavour. This savoury bake has become one of my favourites, and it ticks every box: quick to throw together, bursting with bold Mediterranean flavours, and perfect for sharing (or not!).

The magic is in the pairing — salty Kalamata olives, creamy crumbled feta, and a generous mix of fresh dill and mint. It’s the kind of combo that feels a little fancy, yet familiar and comforting at the same time. Even better? You likely already have most of the ingredients in your pantry or fridge.

FETA AND OLIVE BREAD - ALEVROPITA

Make It Your Own

One of the best things about this slice is how adaptable it is. This herby, cheesy version is my personal favourite, but feel free to play around! Try adding:

  • Sun-dried tomatoes for sweetness and tang

  • Spinach or grated carrot for a veggie boost

  • Chilli flakes for a gentle kick

  • Grated parmesan for an extra cheesy crust

This is a fantastic vegetarian meal prep recipe, ideal for school lunches, picnics, or even a savoury brunch. It also pairs beautifully with a leafy salad or a simple tomato soup.

Serving & Storage Tips

  • Serve warm or at room temp to enjoy best.

  • Keeps well in an airtight container in the fridge for up to 4 days.

  • Reheat gently or enjoy at room temperature.

  • Can be frozen — just wrap individual portions and defrost as needed.

This looks amazing and I think I might try it with halloumi cheese, but there’s nowhere in the recipe that states adding sesame seed to the top. Can you please advise. Thank you for sharing this recipe..

    • It is such a great one-bowl recipe! Yes, totally option re. Sesame seeds. 1 tsp is plenty, or as much or as little as you like. Mary xx
