A Savoury Herb, Feta & Olive Bake — My Go-To Add-to-Bowl Favourite
There’s nothing quite like a good “add to bowl” recipe — simple, satisfying, and packed with flavour. This savoury bake has become one of my favourites, and it ticks every box: quick to throw together, bursting with bold Mediterranean flavours, and perfect for sharing (or not!).
The magic is in the pairing — salty Kalamata olives, creamy crumbled feta, and a generous mix of fresh dill and mint. It’s the kind of combo that feels a little fancy, yet familiar and comforting at the same time. Even better? You likely already have most of the ingredients in your pantry or fridge.
Make It Your Own
One of the best things about this slice is how adaptable it is. This herby, cheesy version is my personal favourite, but feel free to play around! Try adding:

OLIVE & FETA ALEVROPITA - Savoury Slice

- 1/3 cup extra virgin olive oil
- 1 cup full-cream milk
- 2 eggs
- 1 1/2 cups plain flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped Kalamata olives
- 1/2 cup crumbled feta or more if you love it like I do
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1 tsp sesame seeds to scatter on top
Instructions
- Preheat your oven to 170°C fan-forced.
- In a large bowl, whisk together the olive oil, milk, and eggs until smooth.
- Sift in the flour, baking powder, and salt. Stir until a smooth batter forms.
- Fold in the feta, olives, dill, and mint until just combined.
- Line a baking dish (about 30x25cm) with baking paper, pour in the batter, and sprinkle with sesame seeds.
- Bake for 25 minutes or until golden and cooked through.
- Cool slightly, slice, and enjoy!

It is such a great one-bowl recipe! Yes, totally option re. Sesame seeds. 1 tsp is plenty, or as much or as little as you like. Mary xx
