LAMB KLEFTIKO | Greek Lamb Cooked in Parchment

- 5-6 Lamb shanks or 1 lamb leg bone out, cut into pieces
- 5 potatoes quartered
- 1 large capsicum cut into chunks
- 1 onion sliced
Marinade
- Juice of 4- 5 lemons
- 5 cloves of garlic grated
- ¼ cup extra virgin olive oil
- ¼ cup water
- 1 tsp dried oregano
- fresh thyme a few sprigs
- 1 tbsp Dijon mustard
- Salt and pepper
Instructions
- Preheat oven to 180 degrees Celsius, fan forced. Line your tray with pieces of baking paper with plenty of overhang to fold over later.
- Add lamb, potatoes, capsicum, and onion to the tray.
- Combine all of the marinade ingredients in a mixing jug and stir to mix. Pour marinade over the lamb and vegetables and fold the baking paper back over the lamb. Cover tightly with aluminium foil and bake for 2.5 to 3 hours until the lamb is tender and succulent.
